Spooky 7-Layer Bean Dip

I’m pretty sure I’ve been making bean dips since I was a teenager. It has some of my favorite ingredients – black beans, guacamole, tomatoes, cheese, and more – does it get better?

This recipe is a perfect appetizer to bring to any gathering, game day or to simply devour on your own. But, since it’s nearly Halloween, I needed to kick this up a notch and make it spooky and fun by turning it into a graveyard by adding tortilla tombstones, creepy trees and cats.

This dish is packed with fun layers of fresh flavor and the ingredients are simple and blend together perfectly. You can use a variety of layers based on your liking, but these are my favorites.

How to Make a Spooky 7-Layer Bean Dip

Start by mixing the can of refried beans in a bowl with the juice of ½ a lime and salt and pepper. Once combined, spread beans on the bottom of your dish.

In a separate bowl, combine the sour cream with taco seasoning and spread that mixture on top of your beans.

Next is the guacamole. You can use store bought, pre-packaged guac or make your own favorite mixture. Spread carefully over the sour cream mixture. 

Finally, top your dip with cheddar cheese, diced tomatoes, black olives and shredded lettuce (to mimic grass in your graveyard.

Now the fun part. Take your tortillas and a paring knife to cut out your favorite spooky shape. I used tombstones, a cat and creepy tree. Place your tortillas on a baking sheet and lightly spray with olive oil. Bake at 350F for 10 minutes. Flip bake another 3-5 minutes or until golden brown and crisp. 

Once cooled, place tortillas on top of your dip to create your scary graveyard!

Ingredients

  • 1 (16 oz) can refried black beans

  • 8 oz sour cream

  • ½ of taco seasoning packet

  • Guacamole (pre-packaged or make your own)

  • 2 small roma tomatoes, diced

  • 1 cup finely shredded cheddar cheese

  • 6 oz can black olives, sliced

  • 1 cup shredded lettuce

  • 3-4 tortillas

  • Salt and freshly ground black pepper

  • Juice of 1 lime 

Instructions

  1. Mix the refried black beans in a bowl and add the juice of ½ a lime. Add salt & pepper.

  2. Spread bean mixture in bottom of a 9”x9” baking dish.

  3. In a separate bowl, mix together the sour cream and taco packet. Then spread the mixture over top of your beans.

  4. Next, mix your guac with the remaining ½ lime and carefully spread the guacamole on top of the sour cream mixture.

  5. Sprinkle the cheddar cheese as your next layer, then top with tomatoes, black olives and shredded lettuce.

  6. Cut headstones, cats and trees out. Place on a baking sheet, lightly spray with olive oil and bake at 350F for 10 minutes. Flip bake another 3-5 minutes or until golden brown and crisp.

  7. Once tortillas are cooled, place on top of dip to form the graveyard.

  8. Serve with tortilla chips.
