Parmesan Crisps With a Twist
Cheese, cheese and more cheese please!
I love cheese. It’s the only reason I’m not a vegan. I just can’t give it up. Maybe one day, but not any time soon. I really haven’t met a cheese I didn’t like and one of my favorite cheese snacks are parmesan crisps. They’re salty, crunchy, an all around tasty. Another favorite side dish I love are brussels sprouts. Picture crispy roasted sprouts with grated parm and balsamic vinegar. Um, my mouth is watering.
Not long ago I had the idea of combining these two favorite snacks, Nikki style – parmesan crisps with sautéed Brussels sprouts. These are basically crispy nuggets of love and they are so good.

Ingredients
1 cup shredded parmesan cheese
~¾ cup shredded brussels sprouts
Pinch of salt
Pinch of pepper
*I tend to wing my measurements so the ingredients listed are approximate amounts.
Instructions
1. Preheat oven to 400°.
2. Chop the ends of the brussels sprouts and remove the tough outer layers. Slice the Brussels sprout in half lengthwise, place the cut side down and thinly slice the sprout crosswise, making thin shreds.
3. Sautee the shredded brussels sprouts for about 5 minutes or until they begin to soften and are very lightly browned. Be sure to add a pinch of salt & pepper. Once cooked, allow the brussels sprouts to cool on a cutting board and pat dry with a towel.
4. While the sprouts cook, shred the parmesan cheese and add to a bowl.
5. Next add the cooled brussels sprouts to the parmesan cheese and stir to combine.
6. Line a baking sheet with parchment paper or a silicon baking matt.
7. Spoon cheese by tablespoonfuls into a cookie cutter and pat down to secure the mold. Repeat until your mixture is gone. Place crisps 2 inches apart on your baking sheet.
8. Bake at 400° for 5 – 8 minutes or until crisp and golden.
9. Remove from oven, allow to cool, and enjoy!
